Our Wines


RECIOTO di SOAVE DOCG

GRAPES:
Garganega Veronese 85%, Chardonnay, Pinot Bianco and other old varieties 15%.

AREA OF PRODUCTION:
Foothills of Colognola ai Colli, clayey and tuffaceous soil, favourably exposed.

TRAINING SYSTEM:
Pergola Veronese, around 3500 vines per hectare (45000 buds/hectare)

YIELD PER HECTARE:
About 9000 kg of grapes (6000 litres of wine) with summer pruning.

HARVESTING PERIOD:
Starting around the first week in September with early varieties and ending mid-October; two passes, and selection of the best grapes for laying out.

WINEMAKING:
Crushing in February/March without destemming, long maceration until start of fermentation (15 days) to encourage extraction of fragrances and high quality natural tannins, separation of first pressings.
Slow fermentation in barriques and first racking at end of May. Wine is returned to the wood to complete the natural fermentation process, leaving more than 110g residual sugar that will be present in the bottle.
After two years, racking and light filtration. The wine is bottled and cellared several months more prior to sale.

RECOMMENDED ACCOMPANIMENTS
Pandoro di Verona, panettone, creamy desserts and dry patisserie products are the ideal accompaniment. Unconventionally, worth trying with herb, salty and/or strong cheeses, on their own or with honey, jam or sweet pickle, goose liver. Served cold, an incomparable fin-de-repas.
