Our Wines


CHARDONNAY

GRAPES:
Chardonnay 100%.

AREA OF PRODUCTION:
Foothills of Colognola ai Colli, clayey and tuffaceous soil, favourably exposed.

TRAINING SYSTEM:
Espalier or Guyot 4500 vines per hectare (45000 buds/hectare).

YIELD PER HECTARE:
Around 12000 kg of grapes (8400 litres of wine).

HARVESTING PERIOD:
Late August – early September.

WINEMAKING:
Roller crushing, short enzyme maceration and separation of first pressings.
Static cleaning and fermentation with selected yeasts at controlled temperature, around 18-21 °C.
Malolactic fermentation and aging in steel tanks, bottling and cellaring for a number of months before release for sale.

RECOMMENDED ACCOMPANIMENTS
Antipasti, including salami, starters in general, shellfish and fish entrees, white or boiled meat; an optimum aperitif with nibbles and olives.
Serve chilled, preferably in crystal glasses.
