Our Wines			SOAVE SUPERIORE DOCG AUGE GRAPES: Garganega Veronese 85%, Chardonnay, Pinot Bianco and other old varieties 15%. AREA OF PRODUCTION: Foothills of Colognola ai Colli, clayey and tuffaceous soil, favourably exposed. TRAINING SYSTEM: Pergola Veronese, around 3500 vines per hectare (45000 buds/hectare) YIELD PER HECTARE: About 9000 kg of grapes (6000 litres of wine) with summer pruning. HARVESTING PERIOD: Starting around the first week in September with early varieties and ending mid-October; two passes and careful selection to ensure optimum aging. WINEMAKING: Roller crushing, short enzyme maceration and separation of first pressings to encourage extraction of fragrances and high quality natural tannins. Static cleaning and fermentation with selected yeasts at controlled temperature, around 20-22 °C. Aging for at least one year, encouraging malolactic fermentation, in new lightly toasted barriques. Bottling followed by extended cellaring before release for sale. RECOMMENDED ACCOMPANIMENTS Antipasti and starters, strong flavours included, shellfish entrees and fish dishes generally, eggs and white or boiled meat; an optimum aperitif with salami and olives. Serve chilled, preferably in crystal glasses.
