AMARONE DELLA VALPOLICELLA DOC 1888 “RISERVA”
GRAPES:
Corvina and Corvinone Veronese 70%, Rondinella 15%, Molinara 3% and other old varieties 10%.
AREA OF PRODUCTION:
The hills of the Val d’Illasi, tuffaceous alluvial soil with stratified calcareous marine rocks, south-west facing and rising to approximately 250 m elevation.
TRAINING SYSTEM:
Pergola, 3000 vines per hectare, Guyot 4500 vines per hectare (45000 buds/hectare)
YIELD PER HECTARE:
A very special wine that could only originate in the vineyard. Low yield both in grapes, around 7000 kg, and in wine, lower than 30% (around 2000 litres per hectare).
HARVESTING PERIOD:
The quantity of straggly clusters sorted and harvested by hand for raisining (on racks) will vary between 10% and 30% of total production, according to the vintage.
From the end of September, using suitably trained pickers. The clusters are placed in small crates and transported with care to the fruit loft to ensure optimum drying conditions.
WINEMAKING:
End of December to end of February (depending on the vintages), using roller crushers, with partial destemming. Fermentation takes place in small containers of 2600 litres capacity; the temperature, raised initially to 10 °C, stabilizes at around 15 °C for the duration.
Particularly long maceration, in excess of 40 days, with 1 délestage (rack and return) every other day.
After 2 racking operations (June/July) the clear wine is transferred to oak casks of 225 up to a maximum 500 litres capacity, with around 20% new wood. After one year, analytical and sensory examination are followed by approval, if the wine qualifies as a "riserva", according to our own very stringent criteria. Thereafter, another cleaning rack, and the wine stays in the casks for a few years more.
Six months in steel tanks for final assemblage, then maturing in the bottle for at least one year.
RECOMMENDED ACCOMPANIMENTS
Robust entrees, with meat, game and wildfowl, extra-mature and strong cheeses, accompanied by pickles if preferred.
This ‘riserva’ releases all of its power and maximum excitement, with high elegance and perfect balance, when sipped leisurely in convivial company, at table or otherwise, stimulating pleasant conversation or aiding quiet reflection. Always serve in large crystal glasses.
